Call the shelter. Talk to the woman. Tell her what your aspirations are and that there's this job that would help your career aspirations. Tell her you'd be happy to come in and provide temporary assistance, but your heart would like to follow the flying career. Tell her you'd be there for probably a month at minimum (interview next Friday, they get back to you early the next week, you give two weeks notice, that's about a month) and that she should probably continue to look for a more permanent replacement. If she's uncomfortable with that arrangement, then you were honest, and you didn't screw them. If she's ok with it because they really need the help *now*, then it's a win win.
In general, I find blatant honesty to be shockingly appreciated in times like yours.
