Last night I cooked a thai food meal that was so delicious, I'm going to share the recipe with you.
Ingredients:
1 box A Taste of Thai Spicy Thai Peanut Bake
1 box A Taste of Thai Pad Thai for Two
3 boneless chicken breasts, thawed and cubed (or slivered, if you like it that way)
2 tbs vegetable oil
2 eggs
a small amount of milk
1/2 cup bean sprouts
1 bunch green onions
1 lime
Directions:
Soak noodles from pad thai box in hot water for 20-25 minutes. Drain.
While soaking: Preheat oven to 350°. Place chicken pieces in a plastic bag. Add a splash of milk. Add spicy peanut bake mixture. Close bag and shake well until chicken pieces are covered (like Shake 'n' Bake!). Empty bag into oven-safe dish. Bake at 350° for 20 minutes; remove and stir; return to oven for another 10 minutes. (This is the timing that worked for me. Based on your oven, the amount of chicken you use, and how it is cut, it is possible that the cook times are different. Check by cutting open a piece of chicken and ensuring that the inside is cooked white, not pink.)
While cooking: cut green onions to personal preference. I cut them in half and then diced the bottom end (whiter) but cut the upper end (greener) as inch-long pieces.
When chicken is ~5-10 minutes from finishing: Heat oil in a large skillet or wok. Scramble two eggs into the oil on medium heat until barely firm. Add softened noodles and cook until al dente, stirring often. (My chicken finished early, and I drained the spicy peanuty chickeny liquid in the bottom of the pan into the noodles as they cooked - this might've been key to the yumminess.)
Add bean sprouts, green onions, and pad thai sauce mixture. Stir and cook for a few more minutes. Add chicken pieces and mix well.
Serve, garnished with slices of lime which can be squeezed onto the meal for flavor. I'm a big fan of lime juice, so I emptied half of a lime onto my plate.

This was one of the best meals I've made in a while, and I'm looking forward to making it again. I'm going to have to ponder what types of vegetables I can add to the mixture to make it a bit more healthy. :) Oh, and I'm sure tofu would be just as yummy as chicken!
